Ideaal als je restjes hebt. Je kunt er doperwtjes bij doen, kerstomaatjes of prei bijvoorbeeld. Het recept is voor twee porties (gemakkelijk aan te passen aan meer of minder eters), is vegetarisch en met wat sla, tomaat of komkommer heb je een complete maaltijd.<\/p>\n<p>2 porties, vegetarisch<br \/>\nKosten ongeveer \u20ac 4,50 totaal<\/p>\n<p><b>Ingredi\u00ebnten:<\/b><\/p>\n<ul>\n<li>scheut olie of vloeibare margarine<\/li>\n<li>1 ui, gesnipperd<\/li>\n<li>1 paprika in blokjes<\/li>\n<li>250 gram broccoli in roosjes, vers of uit de diepvries<\/li>\n<li>3 eieren<\/li>\n<li>3 theelepels rode pesto (uit een klein potje van 90 gram)<\/li>\n<li>100 ml (houdbare) slagroom<\/li>\n<li>50 gram geraspte kaas<\/li>\n<li>zout &amp; peper<\/li>\n<\/ul>\n<p><b>Bereiden:<\/b><\/p>\n<ul>\n<li>doe de olie of margarine in een middelgrote koekenpan en zet op middelhoog vuur<\/li>\n<li>doe de gesnipperde ui erin en voeg de paprikablokjes toe en bak al omscheppend een minuut of 3<\/li>\n<li>voeg dan de broccoliroosjes toe en bak een paar minuten mee (als uit diepvries, totdat helemaal ontdooid)<\/li>\n<li>ondertussen klop je in een kom de eieren los met de slagroom, de rode pesto, wat zout en een paar flinke draaien aan de pepermolen<\/li>\n<li>zet dan het vuur onder de pan laag<\/li>\n<li>giet het eimengsel gelijkmatig over het broccolimengsel<\/li>\n<li>verdeel de geraspte kaas erover<\/li>\n<li>doe de deksel op de pan en bak zachtjes nog een minuut of 8 tot de bovenkant gestold is en de kaas gesmolten<\/li>\n<li>als je pan in de oven kan, dan kun je de frittata daarna nog een bruin korstje geven onder de grill, maar dit moet niet<\/li>\n<li>snijd de frittata in punten en serveer met wat sla of andere rauwkost.<\/li>\n<\/ul>\n<p>Eet lekker!<\/p>\n","protected":false},"excerpt":{"rendered":"<div class=\"mh-excerpt\"><p>Frittata met broccoli en rode pesto Als er nog eieren zijn van de Pasen dan gebruik je die en anders koop je wat eieren, dit <a class=\"mh-excerpt-more\" href=\"https:\/\/nietweerpizza.nl\/?p=264\" title=\"Frittata met broccoli en rode pesto\">[&#8230;]<\/a><\/p>\n<\/div>","protected":false},"author":1,"featured_media":268,"comment_status":"open","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"ngg_post_thumbnail":0,"jetpack_post_was_ever_published":false,"_jetpack_newsletter_access":"","_jetpack_dont_email_post_to_subs":false,"_jetpack_newsletter_tier_id":0,"_jetpack_memberships_contains_paywalled_content":false,"_jetpack_memberships_contains_paid_content":false,"footnotes":"","jetpack_publicize_message":"","jetpack_publicize_feature_enabled":true,"jetpack_social_post_already_shared":true,"jetpack_social_options":{"image_generator_settings":{"template":"highway","default_image_id":0,"enabled":false},"version":2}},"categories":[2,8,10],"tags":[],"class_list":["post-264","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-4-of-meer","category-koken-voor-2","category-vega"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v20.4 -
